Bife de coxão mole suíno - com molho de laranja...hummmm

Acho que eu já comentei no blog que adoro carne de porco. Vamos combinar: tem carne mais saborosa?

Aproveito para colar aqui uma reportagem da intranet do meu trabalho sobre os benefícios da carne de porco e do festival que tá rolando aqui na City.

Então corra, porque esta é a última semana para aproveitar a terceira edição do Festival Sabor Suíno que se realiza na Capital entre os dias 13 e 30 de setembro. 44 restaurantes participam do festival e trazem pratos criados especialmente para o evento. Os preços variam de R$ 24,90 a R$ 34,90 e atraem o público que gosta de comer bem mas não quer pagar caro por isso. "

Então, na onda, comprei bife de coxão mole suíno. Nunca havia experimentado e usei um tempero que aprendi com o fofo do Jamie... e de quebra fiz um molho de laranja a la Angel.


700 gr de bife de coxão mole (uns 8 bifes, peça ao açougueiro para cortar)
punhadinhos (1 colher sobremesa) de ervas frescas: salsa, coentro, manjericão, orégano, tomilho, cebolinha.
1colher de chá de sal e pimenta do reino moída na hora a gosto
suco de 1/2 limão
2 dentes de alho socados
1 colher de sopa de azeite

1. Num pilão, misture as ervas picadas e amasse-as com o alho. Adicione sal, pimenta, suco do limão e azeite. Misture bem.

2. Tempere os bifes com essa mistura. Deixe marinar uns 30 min. Reserve o tempero que sobrar na vasilha para usar depois no molho.

3. Aqueça uma frigideira com um pouco de margarina ou azeite e doure os bifes dos dois lados. Reserve-os.

4. Na mesma frigideira em que fritou os bifes, faça um deglacê para o molho: adicione 1/4 xícara de licor de laranja, suco de 1 laranja, os temperos que sobraram da marinada, 1 colher de sopa de margarina e deixe ferver até reduzir e engrossar. Coe e coloque sobre os bifes.

Sirva em seguida com um arroz branco soltinho.
